I started spiralizing zucchini and yellow squash like no other, making more zucchini spaghetti recipes then I ever thought I would! I mean don’t get me wrong…I like using zucchini in recipes, but unless it’s cooked right or turned into zoodles, it’s sort of a boring raw vegetable. I love pasta so in efforts to figure out a way to keep enjoying my favorite Italian dishes, I dusted the cobwebs off my spiralizer and brought it back out. I bought a counter-top simple spiralizer years ago, used it a few times and loved it, but somehow forgot about it and managed to push it all the way to the back of my pantry. I can’t believe it’s taken me this long to post a zoodle recipe (and I also can’t believe it’s already JUNE!!!). You can read the full article here from the Whole30 team but here is the short answer: Corn oil, rice bran oil, soybean oil, and peanut oil are banned from a whole30. When you’re ready to eat, microwave or heat over the stove to avoid mushy noodles. You can place the chicken/veggie mixture into a container and place your raw zucchini noodles on top. If you are going to meal prep this dish, I recommend not adding the zucchini noodles to the dish until you are ready to serve.Typically I will squeeze them again and then add them to whatever dish I’m making. Lay the zucchini noodles out on a paper towel lined baking sheet.I use a thick, absorbent (and clean!) dish towel and squeeze the water out of the noodles hard.
